Wisconsin Dairy News: Edelweiss Authentic Wisconsin Cheese

VERONA (WKOW)-- Wisconsin is known for its award-winning cheese, but sadly there are still some people who think it's mainly Cheddar and Colby. Edelweiss Cheese Shop in Verona is trying to change that!

Kathy Workman, owner of Edelweiss Authentic Wisconsin Cheese says, "We have about 120 different cheeses, and we're growing because we try to bring in new things, then we're providing sandwiches made with cheese, you know grilled cheese and cold sandwiches." When Kathy and her husband Bruce; a Wisconsin Master Cheesemaker, decided to open a cheese shop, they had a specific goal in mind!

Bruce Workman, owner of Edelweiss Authentic Wisconsin Cheese says, "There was no way that I was going to bring imported cheese into our store.  I've said that from the get-go, and I'm a firm believer that Wisconsin makes the best cheeses in the world and we're going to have them here in our store." Not only do they sell Wisconsin cheese, the store is peppered with other items that are Wisconsin-made, such as local beers, and cheese boards. But the highlight for Kathy and Bruce is introducing customers to something unique and homegrown.

Kathy says, "People come in and they actually look at something other than cheese curds; which are wonderful, and I know people love cheese curds, but to give them a little bit more opportunity to say oh, have you tried our Butterkäse, or our Havarti? And kind of open their eyes to something a little bit different." The shop's cut & wrap counter is filled with a variety of Wisconsin artisan cheeses. She says, "The open case has our more high-end products in it, and we like to give people samples of that so that they have an opportunity to try something new and different, plus we put samples out also everyday of something a little bit different."
