St. Patrick's Day Recipe: Reuben stuffed potato skins


MADISON (WKOW) -- St. Patrick's Day is coming up on Sunday and even if you're not Irish, it's still fun to celebrate.

Kevin English from GFS Marketplace joins Wake Up Wisconsin Weekend to cook up a fun, tasty St. Patrick's Day recipe.

Reuben Stuffed Potato Skins
1 Large Baked Potato
Swiss cheese (shredded or sliced)
Shaved Corned Beef
Thousand Island dressing
Wash and scrub the potato. Poke holes in a potato with a knife or fork. Wrap in foil and bake in a 375 degree oven for 1 hour or until potato is soft. Remove the foil and slit the top of the potato open. Stuff the potato with corned beef, Swiss cheese, and sauerkraut. Return the potato to the oven and heat it through. When you're ready to serve, top with Thousand Island dressing to your desired taste.
