Chef's Corner: Aged Wisconsin Cheddar and Ham Omelet


Chef Dan brought a dish to Wake Up Wisconsin Tuesday that will really get your taste buds going.  He shared the secrets of a great omelet with anchor Lindsay Veremis and this tasty recipe.

Aged Wisconsin and Cheddar Omelet

Yield: 1 Omelet

Ingredients: 3 Farm Fresh Eggs, 1 T Butter, 1/4 C Sweet Pepper sauteed quickly, 1 Scallion, cut into thin rounds, 2 T Diced Ham, 2t Heavy Cream (optional), 2T Aged Cheddar Cheese, To Taste Salt and Pepper

Preheat a NONstick pan over medium heat.  Whisk whole eggs with cream and season with salt and pepper.  Melt 1/2 T of butter in pan.  Pour egg in pan and stir gently until egg just starts to set in the pan.  Flip egg omelet once.  Place cheese, peppers, scallion, and ham in line down the center of the egg omelet.  As soon as the omelet is set, fold the omelet over once in half and place or serving dish. Garnish with fresh herbs, extra cheese, or green salad.
