Mother's Day treats with a vanilla twist

With Mother's Day fast approaching many of us are looking for a sweet treat to share with mom, perhaps something tasty to brighten her day. Julie Wiedmeyer of Sun Prairie's "The Vanilla Beanery" stopped by Wake Up Wisconsin to share a few tips, using her favorite ingredient, vanilla.

As a mom herself, Wiedmeyer says she always cherishes handmade gifts.  Sometimes it was a clay artwork project from school, a handwritten note, or something special from the kitchen.  Here's one idea.

Stuffed Blueberry Vanilla French Toast Bake

  • 1 pkg cream cheese, room temperature
  • 1/4 cup powdered sugar
  • 1 tablespoon pure vanilla extract
  • 6 slices of bread
  • 1 package frozen blueberries
  • 5 eggs, beaten
  • 1/2 cup milk
  1. In a mixing bowl, combine the cream cheese, powdered sugar, and vanilla.  Mix on low speed until blended and then mix on high speed for 2 minutes.
  2. Cut up 3 slices of bread into cubes, layer in bottom of greased 9 x 9 inch pan.
  3. Layer cream cheese mixture over bread.
  4. Layer berries over cream cheese.
  5. Cut up 3 slices of bread into cubes, layer over top.
  6. Mix eggs and milk and pour over entire contents.
  7. Cover and refrigerate until chilled or overnight.
  8. Cover with foil and bake 30 minutes at 350 degrees.  Uncover, bake an additional 30 minutes.
  9. Serve warm.
