MADISON (WKOW) -- An online video series, started here in Madison, aims to bring an awareness of sustainable foods and healthy eating.
Producer Dave Haldiman and chef Barbara Wright are hoping to bring the web series to a national audience. At this point, they've filmed five episodes, but hope to shoot many more.
To fund the project, they've started a Kickstarter campaign to hire an editor and shoot additional footage. Haldiman and Wright say their goal is to spread a message of sustainable, ethical eating and highlight the local food communities that make it possible. They say Madison was a great place to start.
The first episodes include garden fresh foods for children and a Minnesota cattle rancher. You can see more on A Tasty Guide to a Healthy Planet's Facebook page.
Wright gave us a taste of what's to come quite literally on Wake Up Wisconsin, showing off this recipe. She put it together in just 5 minutes, so it's as easy as they come.
Bun Noodle Salad
2 cups loose pack salad green, arugula, romaine, Bibb, butter etc.
½ cup diced herbs, basil, mint, cilantro etc.
3 oz cellophane noodles or rice noodles
1 1/4 c crunchy peanut butter
½ cup sesame oil
¼ to ½ tsp. Thai chili paste
¼ cup honey
½ cup soy sauce
2 tbsp. fresh lemon juice
1 tsp. grated fresh ginger
2 cups fine cut soft vegetable, summer squash, zucchini, onion, red pepper etc
Wash and shred greens and herbs, place in large salad bowl. Chill in refrigerator. Cook noodles until tender, drain well and place on greens in salad bowl, chill. In sauté pan mix next 7 ingredients and cook over low heat until incorporated. Remove and set to one side. Sauté vegetable in sauté pan till half cooked. Add sauce and sauté until tender. Just before serving pour sauté on salad. Garnish with basil leaves and chopped peanuts if desired.
