MADISON (WKOW) -- Great food and a great football game usually go hand in hand, and there's nothing more exciting that a Green Bay Packers playoff game.  If you're planning a party a "Green and Gold" food theme might be the way to go.

Metcalfe's shared of few ideas on Wake Up Wisconsin, along with some football fan-approved recipes featuring local or Wisconsin ingredients.

 Beer and Cheese Soup

  • Half gallon chicken stock
  • 18 oz. Tyranena's Rocky's Revenge Beer, 1.5 bottles (Lake Mills, WI)
  • Quarter gallon Organic Valley heavy cream (LaFarge, WI)
  • 1.5 lbs. Hook's Cheddar cheese, cubed (Mineral Point, WI)
  • 1.5 lbs. American cheese (or Velveeta for creamier soup)
  • 1 cup shredded parmesan cheese 

Bring chicken stock to a boil for approximately 15 minutes. Reduce to quarter gallon. Add beer and simmer 15 minutes. Add cream and bring to simmer. Add cheese and stir constantly until cheese melts. Note: never let the soup boil after the addition of cheese. To thicken to your liking, add corn starch mixed with a little water (consistency of syrup).

  • 1 jar creamy Gargano & Co. ‘Livornese alla Peppino' sauce
  • 16 oz. bag frozen whole leaf spinach
  • 2 14 oz. cans artichoke hearts, chopped roughly
  • 12 oz. grated Fontina cheese (Provolone may be substituted)
  • 3 oz. grated Parmesan cheese (use Parmigiano-Reggiano, if possible)

Preheat oven to 400 degrees. Pour all ingredients in a large bowl and mix thoroughly with a large spoon. Pour into a large oven safe dish and bake for 35-40 minutes or until bubbly and slightly golden at edges. Serve with sliced baguette or crackers. Enjoy! Serves 10-12 as an appetizer
