WI Dairy News: A cheesy solution to WI winters


MADISON (WKOW) -- One of the by-products of cheese making is a cheese brine solution. It's great for flavor, but disposing of it can present a challenge.

So the Polk County Highway Department has found a great solution. In December of 2009 Polk County started testing the substance on icy roads to see how it would work as an anti-icing agent.

"It's a pre-wetter," says Moe Norby of the Polk Co. Highway Department. "It keeps the dry salt from bouncing off the roads, and we get a better burn, a quicker reaction time with the snow and ice so we can turn down our salters 30% to use less material."

Recycling the brine solution also benefits farms, like F&A Dairy.

"We have to kind of get rid of it one way or another," says Michael Breault of F & A Dairy. "This way we help the county, the counties around us, and the towns around us."

Now they're just hoping the solution continues to catch on in other Wisconsin communities!
