WI Dairy News: Enjoying WI soup no matter the season


MADISON (WKOW) -- Native Wisconsinites know that combining two of our state's best assets - cheese and beer, simply ends with a singular great taste.

Research firm NPD found that servings of soup at U.S. restaurants grew by 3 percent to 1.6 billion units in the past year. Quick service restaurants led the way by ladling out 8 percent more than last year.

For The Old Fashioned in downtown Madison, Wisconsin Beer Cheese soup has remained popular no matter what season.

"Years ago we used to run it just on Mondays," says chef Bob Miller. "You know it became, it started out this was our Monday soup, it became popular, we did it every Monday, and it wasn't too long after that customers demanded it more of the week."

Curly's Pub in Green Bay serves its Cheddar cheese soup with another Wisconsin classic - Bratwurst! And it's one of the more popular items on the menu.

"It's everything. It's the dairy; it's the cheese, the beer, plus the bratwurst," says executive chef Cliff Johnson. "It's very Wisconsin I would say!"

So if you're looking for something to warm you up this winter, spoil yourself with a little Beer Cheese soup!
