Madison man vying for $20K in meat cutting competition

MADISON (WKOW) -- A Madison man is advancing in a national meat cutting competition that could earn him $20,000.

Abel Ceron will compete in the regional event later this month in Orlando, Florida.  He is hoping to move on to the nationals of the Texas Roadhouse National Meat Cutting Challenge in April and be crowned Meat Cutter of the Year. 

Ceron says the competition is based on precision and quality and it takes a lot of practice to win.  Meat cutters are judged on the number of steaks then can get out of a particular cut of meat.  It is a timed competition.

Dave Hess, manager of the East Madison Texas Roadhouse, says competitors have one hour to finish.

Hess says the Texas Roadhouse team is incredibly proud of Ceron's abilities and can't wait to root him on.  Hess says while some people go to work in a warm office, Ceron spends the bulk of his day in a walk in cooler, so these accolades are well-deserved.
