Pairing wine with chocolate for Valentine's Day

MADISON (WKOW) -- Just in time for Valentine's Day, we're learning how to pair wine with chocolate.  Andy Larsen, with Door Peninsula Winery, shared his expert tips with Wake Up Wisconsin.

He says the rule of thumb is the heavier and darker the chocolate, the more robust the paired wine.  Wine pairings can complement the chocolate's sweetness or contrast with it.

Larsen brought a number of examples along and says not only do you have a variety of wine options to choose from, but chocolate as well.  It is getting more complex, with spiced and dark chocolate growing in popularity.

Here are a few recommendations:
         DARK CHOCOLATE: Sweet, robust dark wine (ex., Blackberry-Merlot or Port)
         WHITE CHOCOLATE: Sweet white wines (ex., Riesling, Apple)
         MILK CHOCOLATE: Sweeter fruit wine (ex., Cherry, Raspberry)
         SPICED CHOCOLATE: Sweeter fruit wine (Strawberry Zinfandel)
         DARK CHOCOLATE/Contrast pairing: Dry red (Merlot or Cabernet)
