WI Dairy News: 20 years of master cheese making

 MADISON (WKOW) -- A program established through a joint partnership of the Wisconsin Center for Dairy Research, UW-Extension, and the Wisconsin Milk Marketing Board celebrates 20 years of elevating the skills of outstanding Wisconsin cheese makers.

In 1994, the Wisconsin Master Cheesemaker program was established.  It is the only one of its kind in the nation.

Founder Jim Path modeled the program after one in Europe with some modifications, the main one he says is this program is cheese-specific.

More than 60 Wisconsin cheesemakers have graduated from the program and master in a specific variety of cheese.

Master Cheesemaker Bruce Workman has gone back many times and is certified in 11 different cheese varieties.  He says, "You always pick up something that you're going to bring back to the plant.  Or it's something that you forgot that's been put on a back burner or that's been retooled again."
