2 great recipes for your 4th of July parties

MADISON (WKOW) -- If you're looking for something unique to make for this year's 4th of July party, Chef Kevin Appleton from VOM FASS has a few suggestions.

Chef Kevin, who also teaches classes at Madison College, appeared on Wake Up Wisconsin with two great recipes. Check them out below:

July 4th Watermelon, Feta and Baby Green Salad

Serves 6-8 

Salad Ingredients:

8 cups baby salad greens

3-4 cups red watermelon, rind removed, seeded, and cut into cubes

8 oz. feta cheese, cubed or crumbled

2 cups blueberries

1/2 cup (2 oz.) fresh mint leaves, minced

Vinaigrette Ingredients:

1 T. shallots, minced fine

1/4 cup VOM FASS Waldburg Star Blueberry, Raspberry or Pomegranate Vinegar

1 T. VOM FASS Waldburg Balsam Mango Vinegar

1/2 cup VOM FASS Orange or Lemon Extra Virgin olive oil

Preparation:

Whisk together the shallots, vinegars, salt and pepper. Slowly pour in the olive oil, whisking to form an emulsion. Taste for flavor and seasoning.  Add a little olive oil if less tartness is desired.  Add a little honey if additional sweetness is desired. Store any leftover dressing in the refrigerator.

Place the greens, watermelon, feta, blueberries and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well, but gently. Taste for seasoning and serve immediately.

Calamansi Mojito 

Serves  2

Ingredients:

6 mint leaves
1 t. sugar
1 T.  VOM FASS Waldburg Balsam Calamansi Vinegar
2 - 3 oz. Yahara Bay Aged Rum (Omit for delicious virgin mojito)

6 oz ginger Ale

2 lime wedges

Preparation:

Place mint leaf and sugar into glass and muddle to bruise and break up the mint. Add ice, rum  and Calamansi vinegar. Fill the glass with ginger ale, garnish with lime and enjoy.
