Colfax bakery creates easy-to-make, allergen-free treats

Colfax (WQOW) -- A western Wisconsin bakery has created treats it says are safe for everyone to eat. 

Jake Dettinger, the General Manager at The Green Bakery in Colfax, has been hard at work in a kitchen for most of his life. 

"Food has really always been my passion, since I was pretty young," Dettinger told News 18 on Friday. But his passion isn't just about feeding hungry customers, he's also concerned about keeping them healthy. 

"I think anything cleaner is kinda where more and more people are heading towards," he said. 

That's why at The Green Bakery, Dettinger works hard to make treats that will satisfy anyone's sweet tooth, even people with dietary restrictions. 

"A lot of companies will look at just gluten free, or dairy free," he said, "but we look at doing them all, so, you know, anyone can eat our food." Dettinger told News 18 all of his treats are gluten free, nut free and vegan, but he promised they're packed full of flavor. 

"Your kids will eat it and they're going to like it 'cause it tastes good," he said. "So you don't have to fight them on -- 'cause that's one of the biggest challenges that a lot of parents have is 'Will my kids actually eat it?'"

Most importantly, The Green Bakery has made it easy to whip up your own healthy, wholesome treats right at home. 

"We've done all the research, put the mixes together. So you can trust that we use the best ingredients and you can get it, you can mix it up, it's going to be free of allergens. It's going to be relatively good for you, compared to whatever other baked goods you're eating," Dettinger said. 

Not only are their bake-at-home mixes safe for sensitive stomachs, but the bakery itself is almost entirely an allergen-free zone. 

"Once you cross that door there -- We've never had nuts, we've never had gluten, we've never had any animal products in our bakery," Dettinger said. "Ever since it started, so we don't have any concerns about cross-contamination or anything like that." 

Right now, The Green Bakery mixes are available online and at some stores around the Twin Cities. Dettinger said they're working on bringing them to stores closer to the Chippewa Valley.
